This recipe came from my mother-in-law, and I’ve changed it up slightly from what she does, but overall it is the same. I need to apologize first because this isn’t an exact recipe, but the good news is, you really can’t mess it up. If you like an ingredient, add more. If you don’t like it, add less. If you want more tomatoes, add more. Wanna add chopped up onions and garlic? Fresh herbs? Go for it! The only recipe you really need to stick to exactly is the brown rice. Make sure you don’t buy a quick cooking rice. It needs to be the long cooking kind, and it will bake in the oven right next to the chicken and be done at the same time.
Soaked & Baked Brown Rice
2 1/4 Cups Brown Rice (slow cooking kind)
3 3/4 Cups Water
1 Tbsp. Apple Cider Vinegar
Extra Virgin Olive Oil
Salt & Pepper
Grab a casserole dish and add your rice, 1 cup of water and the apple cider vinegar. Cover and allow it to soak for 7-12 hours.
Preheat oven to 375 or Convection Oven 350.
Boil your remaining water.
Drizzle olive oil and sprinkle salt and pepper over your rice.
When water boils, pour over rice, cover tightly, and bake for 1 hour.
1 pkg. Chicken (about 1 1/2 lbs. can be thighs or breasts)
2 (28 oz) Cans Diced Tomatoes (preferably BPA free. We used tomatoes from our garden)
Salt & Pepper
Pour a small layer of tomatoes in a baking dish.
Add your chicken and sprinkle with garlic, Italian seasoning, salt and pepper.
Pour more tomatoes on top and season (again) with garlic, Italian seasoning, salt and pepper.
Cover with foil and bake for 1 hour.
** To eat, put the chicken/tomatoes over the rice. We like to sprinkle feta cheese on this. It isn’t Italian, but SOOOOO good! You could also serve this over spaghetti squash or pasta.
** For the rice, this is how we always cook rice. It is really tasty and not mushy at all. If you don’t want to soak your rice ahead of time, just eliminate the apple cider vinegar and boil all of the water to pour on top.
** If you fill your tomatoes too full, make sure you put a pan or some foil under it when you bake it so that you aren’t cleaning up boiled over mess from the bottom of your oven like some certain blogger that I know did cuz she can’t follow her own advice…
** In all honesty, you don’t really need the chicken. The Italian tomatoes over the rice is really good all by itself. Especially with the feta cheese. I get this Feta cheese that is imported from Israel. Not cheap, but SO. FREAKIN. GOOD!!!! Mmmmmm…….
